Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the all-purpose flour, 1 tablespoon of sugar, baking powder, baking soda, and salt until well combined.
  2. Cut in the chilled unsalted butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  3. Gradually add the buttermilk, diced apple, and cinnamon; mix until just combined.
  4. In a separate bowl, beat the cream cheese and 1/4 cup of sugar together until smooth and creamy.
  5. Add in the egg and vanilla extract, mixing until well incorporated.
  6. On a lightly floured surface, roll out the dough to about 1/2 inch thick and cut into squares, approximately 3 inches each.
  7. Place a generous tablespoon of the cheesecake filling in the center of each square, then fold over to encase the filling and seal edges.
