  1. Prepare the Oats: In a medium bowl, combine old-fashioned rolled oats, vanilla almond milk, maple syrup, chia seeds, vanilla extract, ground cinnamon, and a pinch of salt. Stir well, cover, and refrigerate overnight for at least 6 hours.
  2. Make Apple Compote: The next morning, heat a saucepan over medium heat. Add butter or vegan butter, diced apples, ground cinnamon, and maple syrup. Stir occasionally, cooking for about 3-5 minutes until apples are tender.
  3. Thicken Compote: In a small bowl, whisk together cornstarch with a splash of water until smooth. Add to the warm apples, stirring continuously for 1-2 minutes until thickened. Remove from heat and cool.
  4. Serve: Take the chilled oats, spoon into bowls or jars, and top with warm apple compote.
