  • 1 tsp Black Peppercorns or ground black pepper

  • 1 tsp Paprika
  • 1 tsp Dried Rosemary or fresh, reduce quantity as needed
  • 1 tsp Whole Coriander Seeds or use ground coriander
  • 1 tsp Red Chili Flakes adjust to taste
  • 1 tbsp Coarse Sea Salt or kosher salt
For the Tzatziki Sauce
  • 1 cup Greek Yogurt whole-fat preferred
  • 1 medium Cucumber grated, excess moisture squeezed out
  • 2 tbsp Fresh Dill or fresh mint
  • 1 clove Garlic adjust to taste
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice fresh preferred
  • 1 pinch Salt to taste

Method
 

Step‑by‑Step Instructions
  1. Prep Chicken: Pound the chicken thighs to about ½ inch thickness and set aside.
  2. Make Marinade: Grind spices together and mix with garlic, olive oil, and lemon juice.
  3. Marinate Chicken: Coat chicken thighs with marinade, cover, and refrigerate for at least 2 hours or overnight.
  4. Prepare Rotisserie: Place half a large onion upright in a baking tray and insert a bamboo skewer through the onion.
  5. Skewer Chicken: Stack marinated chicken thighs onto the bamboo skewer tightly.
  6. Bake: Preheat oven to 375°F and bake chicken for about 1 hour until 165°F internally.
  7. Cool and Serve: Let the skewered chicken cool for 15 minutes, then slice and serve with Tzatziki and pita bread.
