  • 2 tablespoons Olive Oil Substitute with butter if desired
For the Sauce
  • 2 tablespoons Lemon Juice Freshly squeezed is ideal
  • 1/4 cup White Wine Optional, can substitute with lemon juice
  • 4 tablespoons Butter Ensure softened but not melted
For Garnish

Method
 

Step-by-Step Instructions
  1. Preheat a large skillet over high heat for 3-5 minutes until scorching.
  2. Add chopped bacon to the skillet and cook for 5-7 minutes until crispy. Drain on paper towels.
  3. Pat scallops dry with paper towels and season with salt and pepper on both sides.
  4. In the same skillet, add olive oil and sear scallops for 3-4 minutes on one side, then flip and cook for 2-3 minutes.
  5. Reduce heat to medium, pour in lemon juice and white wine, deglaze and simmer for 2 minutes.
  6. Remove from heat, stir in softened butter until melted and creamy, then toss in scallops and bacon.
  7. Sprinkle freshly chopped parsley before serving.
