- Preheat a large skillet over high heat for 3-5 minutes until scorching.
- Add chopped bacon to the skillet and cook for 5-7 minutes until crispy. Drain on paper towels.
- Pat scallops dry with paper towels and season with salt and pepper on both sides.
- In the same skillet, add olive oil and sear scallops for 3-4 minutes on one side, then flip and cook for 2-3 minutes.
- Reduce heat to medium, pour in lemon juice and white wine, deglaze and simmer for 2 minutes.
- Remove from heat, stir in softened butter until melted and creamy, then toss in scallops and bacon.
- Sprinkle freshly chopped parsley before serving.
