Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish with a little olive oil or butter.
  2. In a large skillet, melt half of the butter along with a splash of olive oil over medium heat. Add sliced mushrooms and chopped yellow onion, sautéing for about 5 minutes until the onions are translucent and the mushrooms are tender.
  3. Add minced garlic for an additional 20 seconds, allowing it to release its fragrant aroma.
  4. Transfer half of the sautéed mushroom and onion mixture to the prepared baking dish.
  5. Season the chicken breasts liberally with salt, pepper, and Italian seasoning.
  6. In the same skillet, brown the seasoned chicken breasts for about 2 minutes on each side.
  7. Carefully place the chicken breasts over the first layer of mushrooms in the baking dish.
  8. Layer the remaining sautéed mushrooms and onions over the chicken, then sprinkle shredded mozzarella cheese on top.
