Preparation Steps
- Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish with a little olive oil or butter.
- In a large skillet, melt half of the butter along with a splash of olive oil over medium heat. Add sliced mushrooms and chopped yellow onion, sautéing for about 5 minutes until the onions are translucent and the mushrooms are tender.
- Add minced garlic for an additional 20 seconds, allowing it to release its fragrant aroma.
- Transfer half of the sautéed mushroom and onion mixture to the prepared baking dish.
- Season the chicken breasts liberally with salt, pepper, and Italian seasoning.
- In the same skillet, brown the seasoned chicken breasts for about 2 minutes on each side.
- Carefully place the chicken breasts over the first layer of mushrooms in the baking dish.
- Layer the remaining sautéed mushrooms and onions over the chicken, then sprinkle shredded mozzarella cheese on top.
- Pour low-sodium chicken broth over the entire dish.
- Place the baking dish in the preheated oven and bake uncovered for about 15 minutes. Ensure chicken reaches an internal temperature of 165°F (74°C).
- Once baked, remove from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley before serving.
