- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup. 
- Wash and scrub the potatoes thoroughly. Cut each potato into wedges, about 8 wedges per potato. 
- In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and paprika. Stir well to create a marinade. 
- Add the potato wedges to the bowl and toss until they are evenly coated with the marinade. 
- Spread the potato wedges in a single layer on the prepared baking sheet. 
- Sprinkle the grated Parmesan cheese evenly over the wedges. 
- Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until they are golden brown and crispy. 
- Remove from the oven and garnish with chopped fresh parsley if desired. Serve hot.
