Spread the potato wedges in a single layer on the prepared baking sheet.
Sprinkle the grated Parmesan cheese evenly over the wedges.
Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
Remove from the oven and garnish with chopped fresh parsley if desired. Serve hot.
