Ingredients
  

  • 2 6-ounce salmon fillets
  • 1/4 cup basil pesto
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Place the salmon fillets skin-side down on the prepared baking sheet.
  3. In a small bowl, mix the basil pesto, olive oil, garlic powder, salt, and black pepper until well combined.
  4. Spread the pesto mixture evenly over the top of each salmon fillet.
  5. Scatter the halved cherry tomatoes around the salmon on the baking sheet.
  6. Sprinkle the grated Parmesan cheese over the salmon and tomatoes.
  7. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
  8. Remove from the oven and let it rest for a couple of minutes. Garnish with fresh basil leaves if desired before serving.
