- Preheat your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by greasing it with butter and lining it with parchment paper.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt until evenly combined.
- In a stand mixer or a large bowl, beat together ½ cup of softened butter and 1 ½ cups of white sugar until light and fluffy, about 3-4 minutes. Add 2 eggs, one at a time, mixing well after each addition. Stir in 1 cup of sour cream, 1 teaspoon of vanilla extract, and 1 teaspoon of banana extract.
- With the mixer on low speed, gradually add the dry flour mixture to the wet ingredients until just combined. Then gently fold in 1 cup of mashed ripe bananas.
- Pour the batter into the prepared baking pan and bake for 22-25 minutes.
- In a mixing bowl, beat 8 ounces of softened cream cheese and ½ cup of softened butter together until smooth. Gradually add 2 cups of sifted confectioners’ sugar and stir in 1 teaspoon of vanilla extract.
- Once the banana bars are completely cool, spread the cream cheese frosting over the top.
