- In a small saucepan, pour half of the tart cherry juice and sprinkle the grass-fed gelatin evenly over the surface. Allow the mixture to sit for about 5 minutes to let the gelatin bloom.
- Place the saucepan over medium heat, adding the remaining tart cherry juice to the bloomed gelatin. Gently stir until it reaches a gentle simmer.
- Remove from heat and let cool until warm, then add the raw unfiltered honey and mix thoroughly.
- Pour the mixture into silicone molds or a shallow dish. Allow to sit at room temperature for about 30 minutes.
- Transfer to the refrigerator and let set for at least 2 hours or until firm to the touch.
- Once fully set, release from molds or cut into cubes. Store in an airtight container in the refrigerator.
