- In a medium bowl, combine rolled oats, brewed espresso, brown sugar, chia seeds, vanilla extract, milk, and a pinch of salt. Stir until well combined.
- If using Greek yogurt, fold it into the oat mixture until evenly distributed.
- Divide the mixture into two jars or containers with lids.
- Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften.
- In the morning, give the oats a good shake or stir. Top with chocolate chips, nuts, and fresh fruit if desired.
