Ingredients
  

  • 1 cup rolled oats
  • 1 cup brewed espresso cooled
  • 1 tablespoon brown sugar
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk dairy or non-dairy
  • Pinch of salt
  • 1/4 cup Greek yogurt optional
  • 1/4 cup chocolate chips or nuts optional, for topping
  • Fresh fruit optional, for topping

Method
 

  1. In a medium bowl, combine rolled oats, brewed espresso, brown sugar, chia seeds, vanilla extract, milk, and a pinch of salt. Stir until well combined.
  2. If using Greek yogurt, fold it into the oat mixture until evenly distributed.
  3. Divide the mixture into two jars or containers with lids.
  4. Seal the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften.
  5. In the morning, give the oats a good shake or stir. Top with chocolate chips, nuts, and fresh fruit if desired.
