Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, mix the peanut butter and powdered sugar until smooth.
  7. Scoop tablespoon-sized portions of the brownie dough onto the prepared baking sheet, leaving space between each cookie.
  8. Make a small indentation in the center of each cookie and fill it with about a teaspoon of the peanut butter mixture.
  9. Top each cookie with a few chocolate chips.
  10. Bake in the preheated oven for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
