Ingredients
  

  • 8 ounces pancit canton noodles
  • 2 tablespoons vegetable oil
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 medium carrot julienned
  • 1 bell pepper thinly sliced
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup cooked chicken shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Cook the pancit canton noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the sliced onion and minced garlic, sautéing until fragrant and the onion is translucent, about 3 minutes.
  3. Add the julienned carrot, bell pepper, and green beans to the skillet. Stir-fry the vegetables for about 5 minutes, or until they are tender-crisp.
  4. Stir in the shredded chicken, cooked pancit canton noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together until well combined and heated through, about 3-4 minutes.
  5. Season with salt and pepper to taste. Remove from heat and garnish with chopped green onions. Serve with lemon wedges on the side.
