  • 1 teaspoon Cornstarch Mixed with 1 tbsp water (optional).

Method
 

Step-by-Step Instructions
  1. Trim any excess fat from the short ribs and pat dry. Season with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the ribs for 4-5 minutes on each side.
  3. Combine soy sauce, hoisin sauce, mirin, brown sugar, garlic, ginger, and chili flakes in a bowl.
  4. Transfer the ribs to a Dutch oven, add onions, pour marinade over, and slow roast at 275-300°F for 3-4 hours.
  5. Remove ribs, simmer the braising liquid until it thickens; add cornstarch if desired.
  6. Optionally broil the ribs for 2-3 minutes for added caramelization.
  7. Serve over rice, noodles, or vegetables, drizzling with glaze and garnishing as desired.
