For the Meatloaf
  • 2 pounds Ground Beef lean beef for juiciness
  • 1 cup Breadcrumbs gluten-free for GF version
  • 1 large Egg binding agent
  • 1/2 cup Milk any milk or non-dairy alternative
  • 2 tablespoons Worcestershire Sauce adds umami
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper to taste
For the Veggies
  • 1 large Green Bell Pepper or red/yellow peppers
  • 1 large Onion white or sweet onions
  • 1 tablespoon Olive Oil for sautéing
For the Cheese
  • 8 slices Provolone Cheese or mozzarella/swiss
  • 2 tablespoons Fresh Parsley optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. In a skillet over medium heat, add olive oil and sauté diced green bell pepper and onion for 5 minutes until softened.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently until just combined.
  4. Press half of the meat mixture into the bottom of a greased loaf pan to form an even layer.
  5. Layer 4 slices of provolone cheese over the meat, then add the sautéed bell peppers and onions on top.
  6. Seal with the remaining meat mixture, pressing gently at the edges.
  7. Bake in the preheated oven for 45-50 minutes until the internal temperature reaches 160°F (70°C).
  8. In the last 5 minutes of baking, add 4 more slices of provolone cheese on top.
  9. Once baked, remove from oven and let rest for 5-10 minutes before slicing.
