Preheat a skillet over medium heat and add the butter, allowing it to melt and coat the pan.
While the butter is melting, crack the eggs into a bowl and whisk them together with salt, pepper, and garlic powder if using.
Place the slices of bread in the skillet and toast them for about 2-3 minutes on each side until golden brown.
Once the bread is toasted, pour the egg mixture evenly over the bread slices.
Sprinkle the shredded cheddar cheese on top of the eggs.
Cover the skillet with a lid and cook for about 4-5 minutes, or until the eggs are set and the cheese is melted.
Remove from heat and garnish with fresh parsley if desired. Serve immediately.
