  • 2 cups Shredded Monterey Jack Cheese Can replace with any melting cheese.
  • 1 cup Sour Cream Can omit for a dairy-free option.

  • 0.25 cup Fresh Cilantro Can substitute with parsley.
  • 2 tablespoons Sliced Green Onions Omit if not preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned, about 7-10 minutes. Drain excess fat.
  3. Stir in taco seasoning and water with beef, and simmer for about 5 minutes.
  4. Add in salsa and cook for an additional 2 minutes.
  5. Mix black beans and corn in a separate bowl.
  6. Spread a thin layer of the ground beef mixture in the bottom of a 9x13 inch baking dish.
  7. Place one tortilla over the beef, then spoon on the bean-corn mixture.
  8. Repeat layers: beef mixture, tortilla, bean-corn mixture, and cheese until all ingredients are used, finishing with cheese on top.
  9. Cover with foil and bake for 25-30 minutes.
  10. Remove foil and bake for an additional 10 minutes.
  11. Let cool for 5 minutes before garnishing with sour cream, cilantro, and green onions.
