Step‑by‑Step Instructions for Cheesy Taco Potatoes
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and baking sheet.
  2. Scrub the potatoes under cold water, pierce each with a fork, rub with olive oil, and season with salt and pepper. Place on a baking sheet.
  3. Bake the potatoes for 45-60 minutes until tender. Prepare the filling in the meantime.
  4. In a skillet, heat olive oil and cook the ground beef until browned. Drain excess fat.
  5. Add the taco seasoning to the beef and simmer for about 5 minutes.
  6. Remove potatoes from the oven, slice down the center, and fluff the insides.
