Ingredients

For the Base
  • 1 cup Corn Syrup Provides sweetness and binds ingredients; honey can be used as a different flavor alternative.
  • 1 cup Peanut Butter Adds creaminess and flavor; choose creamy or crunchy according to your preference.
  • 1 cup White Sugar Enhances sweetness and texture; feel free to reduce the quantity if desired.
  • 6 cups Corn Chex Serves as the cereal base for a delightful crunch; you can opt for Rice Chex for a more traditional flavor.
For the Coating
  • 1 cup Semisweet Chocolate Chips Coating for the clusters that adds a rich chocolate flavor; dark chocolate is a less sweet alternative.
  • 1 cup Butterscotch Chips Offers extra sweetness and distinct flavor; can be replaced with more chocolate chips if desired.

Equipment

  • medium saucepan
  • spatula
  • Baking sheet
  • Parchment paper
  • microwave-safe bowl
  • medium cookie scoop

Method

Step‑by‑Step Instructions
  1. In a medium saucepan, combine 1 cup of corn syrup, 1 cup of peanut butter, and 1 cup of white sugar over medium heat. Stir constantly until melted and smooth, about 3-5 minutes.
  2. Remove from heat and pour the mixture over 6 cups of corn Chex in a large mixing bowl. Fold gently but thoroughly until every piece is coated, about 2-3 minutes.
  3. Line a baking sheet with parchment paper. Scoop portions of the mixture and shape into clusters, placing them on the parchment. Aim for golf ball-sized clusters.
  4. In a microwave-safe bowl, combine 1 cup of semisweet chocolate chips and 1 cup of butterscotch chips. Heat in intervals, stirring until melted and smooth, about 1-2 minutes.
  5. Drizzle the melted chocolate-butterscotch mixture over each cluster, ensuring they are well-coated. Allow to cool at room temperature for about 30 minutes.
  6. Once cooled, serve immediately or store in an airtight container for up to a week.
