  • 2 cups All-Purpose Flour gluten-free blend can be swapped
  • 1 tbsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg or ginger/cardamom
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
For Rolling
  • 1/4 cup Granulated Sugar for rolling

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Mix in the egg yolk, light corn syrup, vanilla extract, and maple extract until combined.
  4. In another bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Shape the dough into 1.5-inch balls and roll in granulated sugar.
  7. Place cookie balls on the baking sheets with 2 inches in between and bake for 10-12 minutes.
  8. Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.
