- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
- Mix in the egg yolk, light corn syrup, vanilla extract, and maple extract until combined.
- In another bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Shape the dough into 1.5-inch balls and roll in granulated sugar.
- Place cookie balls on the baking sheets with 2 inches in between and bake for 10-12 minutes.
