  • 1 lb Ground Beef or Ground Turkey/Chicken
  • 1 cup Breadcrumbs use panko for crunch or gluten-free breadcrumbs
  • 1/2 cup Grated Parmesan Cheese or Nutritional Yeast for vegan diets
  • 1 large Egg or flax egg as a vegan alternative
  • 2 cloves Garlic minced or roasted
  • 1 tbsp Dried Oregano or Italian seasoning
  • to taste Salt
  • to taste Pepper
For the French Onion Soup
  • 3 cups Sweet Onions like Vidalia
  • 4 cups Beef Broth or Vegetable Broth
  • 1/2 cup Dry White Wine or Apple Cider Vinegar
  • 2 tbsp Butter or Olive Oil
  • 1 tsp Thyme
  • 1 leaf Bay Leaf
For Serving
  • 1 loaf French Baguette sliced

Method
 

Preparation
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, oregano, salt, and pepper. Mix until just combined and shape into uniform balls.
  2. Preheat your oven to 400°F (200°C). Bake the meatballs for 20-25 minutes until golden brown and cooked through.
  3. Meanwhile, in a large pot, heat butter over medium heat, add sweet onions and cook, stirring occasionally, for about 30 minutes until caramelized.
  4. Deglaze the pot with wine, simmer for 5 minutes, then add broth, thyme, and bay leaf. Simmer for 20 minutes.
  5. Serve the soup with meatballs and toasted baguette slices topped with cheese.
