Brownie Base
  • 1 cup cottage cheese can substitute with Greek yogurt or ricotta
  • 1 scoop protein powder any flavor like vanilla or chocolate
  • 1/4 cup coconut flour avoid substitutes unless experimenting with almond flour
  • 2 large eggs can replace with a flax egg or chia egg
  • 1/4 cup sweetener customize based on preference
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil can substitute with other oils
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Optional Toppings
  • 1 serving chocolate drizzle melted chocolate or peanut butter
  • 1 cup nuts walnuts or pecans
  • 1 cup chocolate chips
  • 1 cup dried fruits

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (180°C) and lightly grease an 8x8 inch baking dish.
  2. In a medium mixing bowl, combine cottage cheese, protein powder, eggs, melted coconut oil, and vanilla extract. Blend until smooth.
  3. In another bowl, whisk together coconut flour, cocoa powder, and salt until no lumps remain.
  4. Fold the dry ingredients into the wet mixture gradually until fully combined, but do not overmix.
  5. Pour the batter into the prepared baking dish and spread evenly. Bake for approximately 20 minutes.
  6. Remove the brownies from the oven and let cool for about 10 minutes before transferring to a wire rack. Cut into squares.
