Cowboy Casserole is a hearty and flavorful dish made with ground beef, beans, corn, and topped with crispy tater tots and melted cheese.

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10.5 ounces diced tomatoes with green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 package 2.5 pounds frozen tater tots
  • Fresh cilantro chopped (for garnish)

Method
 

  1. In a large skillet over medium heat, brown the ground beef with the chopped onion until the meat is fully cooked and the onion is translucent. Drain any excess fat.
  2. In a large mixing bowl, combine the cooked beef and onion mixture with black beans, corn, diced tomatoes, garlic powder, chili powder, cumin, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased slow cooker. Spread it evenly across the bottom.
  4. Top the beef mixture with an even layer of tater tots, arranging them in a single layer.
  5. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the tater tots are golden and crispy.
  6. About 10 minutes before serving, sprinkle the shredded cheddar cheese over the tater tots. Cover and let it melt.
  7. Once done, garnish with fresh cilantro before serving.
