Preparation Steps
- Preheat your oven to 375°F (190°C).
- Cook the brown rice according to package instructions until tender, about 30–40 minutes. Drain excess water.
- In a skillet, heat olive oil, then sauté diced onion and minced garlic for 5 minutes until soft.
- Stir in spinach and artichokes, cooking until spinach wilts, about 3–4 minutes.
- Combine cooked rice, chickpeas, sautéed mixture, lemon juice, and herbs in a large bowl.
- Transfer mixture to a greased baking dish and top with parmesan.
- Bake for 20-25 minutes until edges are bubbly and top is golden.
- Cool for 5-10 minutes before serving.
