  • 0.5 cup Cashew/Sunflower Seed Parmesan Adds creaminess; vegan cheese can substitute.
For Optional Flavor
  • 0.25 cup Kalamata Olives Optional for extra flavor.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Cook the brown rice according to package instructions until tender, about 30–40 minutes. Drain excess water.
  3. In a skillet, heat olive oil, then sauté diced onion and minced garlic for 5 minutes until soft.
  4. Stir in spinach and artichokes, cooking until spinach wilts, about 3–4 minutes.
  5. Combine cooked rice, chickpeas, sautéed mixture, lemon juice, and herbs in a large bowl.
  6. Transfer mixture to a greased baking dish and top with parmesan.
  7. Bake for 20-25 minutes until edges are bubbly and top is golden.
  8. Cool for 5-10 minutes before serving.
