Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C). Wash and scrub the sweet potatoes thoroughly.
  2. Pierce each sweet potato with a fork and bake for 45-50 minutes until tender.
  3. Cool the sweet potatoes for 10 minutes, then slice them in half and scoop out most of the flesh.
  4. In a skillet over medium heat, melt butter, add apples and cranberries, cooking until tender.
  5. Drizzle in maple syrup, stirring well, and cook for another 2 minutes.
  6. Mash the sweet potato flesh and fold in half of the apple-cranberry filling.
  7. Refill the sweet potato skins with the mixture and top with remaining filling.
  8. Bake the refilled sweet potatoes for an additional 10-12 minutes until warmed through.
