  • 2 cups Black Beans cooked or canned, drained
  • 2 cups Potatoes diced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes with juices
  • 2 cups Vegetable Broth
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper

Cooking Instructions
  1. Heat a large pot over medium heat, add onions and garlic, and sauté until softened.
  2. Add the diced potatoes, chili powder, cumin, salt, and pepper. Stir well to coat.
  3. Pour in vegetable broth and diced tomatoes with juice. Bring to a boil.
  4. Reduce heat, cover, and simmer for about 20 minutes, or until potatoes are tender.
  5. Stir in black beans and cook for an additional 5 minutes to heat through.
  6. Taste and adjust seasoning if needed. Serve hot.
