Ingredients

  • 2 cups Dried Noodles Egg noodles or broken spaghetti; gluten-free options available.
  • 1 cup Diced Red Pepper Any variety of bell pepper can work.
  • 1/2 cup Chopped Green Onions Chives can be substituted.

Method
 

Meatballs Preparation
  1. In a mixing bowl, combine ground turkey, Parmesan cheese, grated onion, egg, dried parsley, salt, and pepper. Mix until well combined, then form into 1-inch balls. Place on a parchment-lined baking sheet and bake at 400°F for 15–20 minutes.
Soup Broth Preparation
  1. In a large pot, pour in chicken stock and water. Bring to a boil, then reduce to a simmer. Add carrots, celery, thyme, basil, salt, and pepper. Simmer for about 10 minutes.
Combine Ingredients
  1. Add the meatballs to the broth along with dried noodles, diced red pepper, and green onions. Stir gently and simmer for another 10 minutes until noodles are tender.
Serve
  1. Ladle the soup into bowls and serve hot, optionally with crusty bread.
