Ingredients

For the Filling
  • 2 tablespoons Butter unsalted
  • 1 cup Chopped Pecans or walnuts
  • 1 cup Old-Fashioned Oats gluten-free option available
  • 1/2 cup Brown Sugar or coconut sugar
  • 1 teaspoon Ground Cinnamon or nutmeg
  • 1/2 teaspoon Ground Ginger optional
  • 1/4 teaspoon Kosher Salt or sea salt
For the Apples
  • 4 pieces Apples Granny Smith or Honeycrisp recommended
For Serving
  • 2 scoops Ice Cream vanilla or caramel
  • 1/2 cup Caramel, warmed store-bought or homemade

Equipment

  • Crock Pot

Method

Step-by-Step Instructions
  1. Begin by washing and drying the apples thoroughly. Carefully core each apple, leaving the bottom intact to hold the filling. Slice the tops off for easier stuffing if desired. Arrange the apples upright in your Crock-Pot.
  2. In a mixing bowl, combine softened butter with chopped pecans, old-fashioned oats, brown sugar, ground cinnamon, ground ginger, and kosher salt. Blend until crumbly.
  3. Spoon the filling mixture generously into each apple core, pressing down lightly. The filling should rise slightly above the tops of the apples.
  4. Cover with lid and cook on low for about 2 hours until the apples are tender.
  5. Once done, carefully remove apples with tongs and place on serving plates. Drizzle with warmed caramel and add ice cream if desired.
