- In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, chili powder, salt, and black pepper. Mix until well combined and creamy. 
- Preheat your oven to 400°F (200°C). If frying, heat oil in a large skillet over medium heat. 
- Place a tortilla on a clean surface. Spoon about 2-3 tablespoons of the chicken mixture onto the center of the tortilla. Roll it tightly, folding in the sides as you go. 
- If baking, place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray. Bake for 15-20 minutes or until golden and crispy. 
- If frying, carefully place the rolled taquitos seam-side down in the hot oil. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels. 
- Serve warm with salsa, guacamole, or sour cream for dipping.
