  • 1 cup Sliced Mushrooms
  • 2 tablespoons Butter Can substitute for olive oil.
  • 1 teaspoon Thyme Dried.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Topping
  • 1 cup Panko Breadcrumbs Use gluten-free if needed.
  • 1/2 cup Grated Parmesan Cheese Or other cheese varieties.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Cook the wild rice according to the package instructions, about 45 minutes.
  3. Sauté onion, garlic, carrots, celery, and mushrooms in butter for 5-7 minutes until tender.
  4. Combine cooked wild rice, sautéed vegetables, and chicken in a large mixing bowl.
  5. Transfer the mixture to a greased 9x13-inch baking dish.
  6. Mix melted butter with panko and Parmesan, then sprinkle over the casserole.
  7. Bake uncovered for 30-35 minutes until golden brown.
  8. Let the casserole rest for 5 minutes before serving.
