Step-by-Step Instructions
  1. In a large pot, drizzle in about 2 tablespoons of olive oil and warm it over medium heat.
  2. Add 1 pound of beef sirloin to the pot, sauté for about 5 to 7 minutes until browned.
  3. In the same pot, toss in 1 diced onion, 1 sliced bell pepper, and 3 cloves of minced garlic. Sauté for 4 to 5 minutes.
  4. Return the browned beef to the pot and pour in 4 cups of beef broth, stirring everything together.
  5. Reduce the heat to low and stir in 1 cup of heavy cream and 1 ½ cups of shredded provolone cheese.
