  1. Brew 2 cups of espresso or strong coffee, then allow it to cool to room temperature. Set aside in a shallow dish.
  2. In a large mixing bowl, combine mascarpone cheese, granulated sugar, brown sugar, kosher salt, and pumpkin pie spice. Beat until smooth. Add pumpkin puree and mix well before gradually whipping in heavy cream.
  3. Dip ladyfingers briefly in cooled coffee, then place in a 13x9 inch dish. Spread half of the mascarpone pumpkin cream over the ladyfingers.
  4. Repeat layering with another set of dipped ladyfingers and the remaining mascarpone pumpkin mixture on top.
  5. Cover the dish and chill for at least 4 hours, preferably overnight for flavor development.
