Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking tray with aluminum foil.
  2. Spread the butternut squash on the tray and drizzle with olive oil.
  3. Slice half a head of garlic in half horizontally, drizzle with olive oil, wrap in foil, and place on the tray.
  4. Roast both the butternut squash and garlic in the oven for about 30 minutes.
  5. Squeeze the roasted garlic into a blender with the butternut squash, chickpeas, harissa, lime juice, ground coriander, and vinegar.
  6. Blend until smooth, then adjust seasoning with salt and pepper.
  7. Transfer to a serving dish and drizzle with olive oil; serve with pita chips, fresh veggies, or crackers.
