Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure even baking.
  2. In a large skillet, drizzle olive oil and sauté sliced mushrooms for 5-7 minutes until golden brown. Stir in minced garlic and cook for 1-2 minutes, then remove from heat.
  3. In the same skillet, add more olive oil and toss in chopped spinach. Sauté for 3-4 minutes until wilted, then combine with the sautéed mushrooms.
  4. In a mixing bowl, blend ricotta cheese, heavy cream, and half of the Parmesan until smooth. Season with salt and pepper.
  5. Layer the lasagna in a 9x13 inch baking dish, starting with ricotta mixture, then noodles, half of the spinach and mushroom mix, and mozzarella. Repeat layers, ending with noodles and remaining cheeses.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
  7. Let the lasagna sit for 10-15 minutes before slicing to allow layers to set.
