- Preheat your oven to 375°F (190°C) to ensure even baking.
- In a large skillet, drizzle olive oil and sauté sliced mushrooms for 5-7 minutes until golden brown. Stir in minced garlic and cook for 1-2 minutes, then remove from heat.
- In the same skillet, add more olive oil and toss in chopped spinach. Sauté for 3-4 minutes until wilted, then combine with the sautéed mushrooms.
- In a mixing bowl, blend ricotta cheese, heavy cream, and half of the Parmesan until smooth. Season with salt and pepper.
- Layer the lasagna in a 9x13 inch baking dish, starting with ricotta mixture, then noodles, half of the spinach and mushroom mix, and mozzarella. Repeat layers, ending with noodles and remaining cheeses.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
- Let the lasagna sit for 10-15 minutes before slicing to allow layers to set.
