Ingredients
  

For the Soup
  • 1 pound Ground Beef can substitute with ground turkey
  • 1 medium Onion chopped; can use shallots
  • 1 can Black Beans drained
  • 1 cup Corn frozen corn works as a substitute
  • 1 can Tomatoes with Green Chiles undrained
  • 1 can Green Chiles drained
  • 1 packet Taco Seasoning homemade can be used
  • 4 cups Beef Broth vegetable broth for vegetarian version
  • 8 ounces Cream Cheese softened; Greek yogurt can be substituted
  • 1 cup Heavy Cream coconut cream for non-dairy option

Method
 

Cooking Steps
  1. In a large pot over medium heat, brown the ground beef for 6-8 minutes, breaking apart until fully cooked. Drain excess grease.
  2. Add the chopped onion to the pot and sauté for 3-4 minutes until soft and translucent.
  3. Stir in the black beans, corn, tomatoes with green chiles, green chiles, and taco seasoning. Add beef broth and mix well.
  4. Bring the mixture to a simmer, then reduce heat to low, cover, and simmer for about 10 minutes.
  5. Ladle out 2-3 scoops of broth into a bowl, mix with cream cheese until smooth, and return to the pot.
  6. Add heavy cream to the pot, stirring gently to combine.
  7. Ladle into bowls and garnish with shredded cheese, green onions, or jalapeños.
