  • 1 medium Carrot, grated or diced
  • 1 stalk Celery, diced
  • 3 cloves Garlic, minced
For the Sauce Enhancement
  • 1 cup White Wine dry variety
  • 1 cup Milk or Heavy Cream use milk for lighter feel
  • 1 pinch Nutmeg
  • to taste Salt
  • to taste Pepper
  • ½ cup Parmesan Cheese, freshly grated

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrot, and celery, and cook for 5-7 minutes until softened.
  2. Increase heat to medium-high and add the ground meat. Cook for 8-10 minutes until browned.
  3. Stir in 1 cup of white wine and simmer for 3-5 minutes until mostly evaporated.
  4. Lower heat and add 1 cup of milk or cream, nutmeg, salt, and pepper. Simmer for 30-45 minutes.
  5. Stir in ½ cup of Parmesan cheese until melted and integrated.
  6. Serve hot over pasta or as a potato topping.
