  • 2 cups Graham Cracker Crumbs or digestive biscuits
  • 1/4 cup Sugar adjust to taste
  • 1/2 cup Melted Butter or coconut oil for dairy-free
For the Filling
  • 16 oz Cream Cheese softened
  • 3/4 cup Granulated Sugar for filling
  • 3 large Eggs room temperature
  • 8 oz Melted White Chocolate high-quality bar recommended
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 teaspoon Peppermint Extract or oil sparingly
  • 1 teaspoon Vanilla Extract
For the Garnish
  • 1/2 cup Crushed Peppermint Candies or chocolate shavings

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter until mixed. Press into a 9-inch springform pan. Bake for 10 minutes and cool completely.
Make the Filling
  1. In a large mixing bowl, beat cream cheese until creamy. Gradually add granulated sugar, mixing well. Add eggs one at a time, fold in melted chocolate, sour cream, peppermint extract, and vanilla extract.
Bake the Cheesecake
  1. Pour filling over cooled crust. Bake for 50-60 minutes until edges are set and center is slightly jiggly. Turn off oven and leave cake to cool in the oven for 1 hour.
Chill and Garnish
  1. Allow cheesecake to come to room temperature, cover, and refrigerate for at least 4 hours, preferably overnight. Remove from pan and garnish with crushed peppermint candies.
