  • 2 large English Cucumbers sliced into 1/4 inch rounds
  • 1 cup Cherry Tomatoes halved
  • 8 ounces Fresh Mozzarella Balls (ciliegine) whole or sliced
  • 1 cup Fresh Basil Leaves torn
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Glaze or balsamic vinegar

Method
 

Preparation
  1. Wash the vegetables thoroughly and slice the cucumbers into 1/4 inch rounds. Halve the cherry tomatoes and prepare the mozzarella balls.

  3. In a small bowl, whisk together the olive oil and balsamic glaze until smooth.
