- In a small bowl, whisk together the olive oil, rice vinegar, sesame oil, soy sauce, grated ginger, and honey until well blended.
- Rinse and dry the mini sweet peppers and Persian cucumbers. Slice the mini peppers into thin rings and the cucumbers into half-moons.
- In a large mixing bowl, add the sliced mini peppers and cucumbers. Gently toss them together.
- Pour the sesame ginger dressing over the mixed vegetables. Drizzle chili oil if desired and sprinkle with everything bagel seasoning.
- Gently toss the salad until coated and serve immediately or chill for 10-15 minutes before serving.
