Ingredients
  

For the Salad
  • 8 pieces Mini Sweet Peppers substitute with bell peppers if needed
  • 4 pieces Persian Cucumbers or use one small English cucumber
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • 1 teaspoon honey
  • to taste Chili Oil optional
  • to taste Everything Bagel Seasoning optional but recommended

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, rice vinegar, sesame oil, soy sauce, grated ginger, and honey until well blended.
  2. Rinse and dry the mini sweet peppers and Persian cucumbers. Slice the mini peppers into thin rings and the cucumbers into half-moons.
  3. In a large mixing bowl, add the sliced mini peppers and cucumbers. Gently toss them together.
  4. Pour the sesame ginger dressing over the mixed vegetables. Drizzle chili oil if desired and sprinkle with everything bagel seasoning.
  5. Gently toss the salad until coated and serve immediately or chill for 10-15 minutes before serving.
