- Combine avocado, sour cream, lime juice, cilantro, kosher salt, and water in a blender. Blend until smooth, then refrigerate.
- Heat avocado oil in a skillet over medium heat. Add ground turkey and onions, break apart, and cook until browned, about 4-5 minutes. Stir in taco seasoning.
- Return skillet to low heat. Stir in black beans, green chiles, and remaining taco seasoning. Add water to maintain moisture, simmer for about 15 minutes.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment, spray with cooking spray, and arrange tortillas. Sprinkle cheese and fill with turkey mixture before folding.
- Bake for 10-12 minutes until golden and crispy, flipping halfway through.
- Let cool briefly, serve with avocado sauce.
