  • 2 tbsp Water Add more water if necessary for sauce consistency.
For the Taco Filling
  • 2 tsp Avocado Oil Used to sauté turkey and onions.
  • 8 oz Lean Ground Turkey Ground chicken is a great substitute.
  • 2 1/2 tsp Homemade Taco Seasoning Use premade taco seasoning if desired.
  • 1/3 cup chopped Onion Adds essential flavor to your filling.
  • 3/4 cup canned Black Beans Brings texture and protein.
  • 4 oz Green Chiles Pick mild or hot based on preference.
  • 2 tbsp finely chopped Cilantro
For the Taco Assembly
  • Cooking/Baking Spray Prevents sticking to the baking sheet.
  • 1 1/2 cups shredded Monterey Jack Cheese Cheddar or Pepper Jack also work well.

Method
 

Preparation
  1. Combine avocado, sour cream, lime juice, cilantro, kosher salt, and water in a blender. Blend until smooth, then refrigerate.
  2. Heat avocado oil in a skillet over medium heat. Add ground turkey and onions, break apart, and cook until browned, about 4-5 minutes. Stir in taco seasoning.
  3. Return skillet to low heat. Stir in black beans, green chiles, and remaining taco seasoning. Add water to maintain moisture, simmer for about 15 minutes.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment, spray with cooking spray, and arrange tortillas. Sprinkle cheese and fill with turkey mixture before folding.
  5. Bake for 10-12 minutes until golden and crispy, flipping halfway through.
  6. Let cool briefly, serve with avocado sauce.
