Creamy Avocado Sauce Preparation
- Combine one ripe avocado, ½ cup of sour cream, lime juice, fresh cilantro, and kosher salt in a blender. Blend until smooth and creamy. Refrigerate until serving.
Taco Filling Preparation
- Heat a skillet over medium heat and add 1 tablespoon of avocado oil. Add 1 pound of lean ground turkey and one finely chopped onion. Cook for 4-5 minutes until browned. Stir in taco seasoning.
- Stir in the drained black beans and green chiles. Simmer on low heat for about 15 minutes.
Building and Baking Tacos
- Preheat the oven to 425°F (220°C). Arrange 8 tortillas on a baking sheet. Add Monterey Jack cheese and spoonfuls of the turkey filling onto each tortilla. Fold in half.
- Bake for 10-12 minutes until the tortillas are golden brown and the cheese is melted.
Serving
- Remove from oven and let cool for a minute. Serve warm with creamy avocado sauce.
