For the Creamy Avocado Sauce

Method
 

Creamy Avocado Sauce Preparation
  1. Combine one ripe avocado, ½ cup of sour cream, lime juice, fresh cilantro, and kosher salt in a blender. Blend until smooth and creamy. Refrigerate until serving.
Taco Filling Preparation
  1. Heat a skillet over medium heat and add 1 tablespoon of avocado oil. Add 1 pound of lean ground turkey and one finely chopped onion. Cook for 4-5 minutes until browned. Stir in taco seasoning.
  2. Stir in the drained black beans and green chiles. Simmer on low heat for about 15 minutes.
Building and Baking Tacos
  1. Preheat the oven to 425°F (220°C). Arrange 8 tortillas on a baking sheet. Add Monterey Jack cheese and spoonfuls of the turkey filling onto each tortilla. Fold in half.
  2. Bake for 10-12 minutes until the tortillas are golden brown and the cheese is melted.
Serving
  1. Remove from oven and let cool for a minute. Serve warm with creamy avocado sauce.
