  • 2 tbsp Chile Blend Mix chili powder, smoked paprika, and cumin
  • 2 cloves Garlic Minced
  • 1 small Onion Diced
For the Cauliflower Rice
  • 4 cups Cauliflower Rice Fresh or frozen
For Brightness
  • 1 medium Lime Juiced
  • 1/4 cup Cilantro Chopped
  • 1 cup Veggies Shredded red cabbage, bell pepper, corn
For the Sauce
  • 1 cup Greek Yogurt Can replace with sour cream or dairy-free yogurt
  • 2 tbsp Hot Sauce
  • 1 tsp Salt To taste

Method
 

Step-by-Step Instructions
  1. Prepare the Yogurt-Lime Sauce by whisking together Greek yogurt, lime juice, hot sauce, and a pinch of salt until smooth. Chill the sauce in the refrigerator.
  2. Cook the Ground Beef in a skillet over medium-high heat, crumbling it into the pan. Season with salt and pepper, cooking until browned, then break into crumbles and cook until crispy.
  3. Stir in the Chile Blend, toasting it for about 30 seconds. Mix in the tomato paste, cooking for 1 minute, then finish with lime juice and vinegar.
  4. Sauté the Cauliflower Rice in another skillet with oil and minced garlic, cooking until tender. Mix in lime juice and chopped cilantro off the heat.
  5. Assemble the bowls by layering cauliflower rice, topping with crispy beef, colorful veggies, and drizzling with yogurt-lime sauce. Garnish with cilantro and lime wedges.
