Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and season with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to combine and cook for about 5-7 minutes until heated through and slightly crispy.
  2. While the chicken is cooking, warm the tortillas in a separate skillet or microwave until pliable.
  3. Once the chicken is crispy, remove it from heat. Assemble the tacos by placing a generous amount of the chicken mixture onto each tortilla.
  4. Top each taco with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
  5. Serve immediately with lime wedges on the side for squeezing over the tacos.
