  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 450°F (230°C).
  2. In a large pot, bring salted water to a boil. Add the baby potatoes and cook for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.
  3. On a baking sheet lined with parchment paper, place the potatoes. Use the bottom of a glass or a potato masher to gently smash each potato until flattened but still intact.
  4. Drizzle the olive oil over the smashed potatoes, ensuring they are well coated. Sprinkle with garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.
  6. Remove from the oven and garnish with fresh parsley before serving.
