  • 1 cup Vegetable Broth Low-sodium if preferred
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt Adjust as needed
  • 1/4 cup Cornstarch Can substitute flour
  • 1 cup Vegan Breadcrumbs Gluten-free options available
For the Cream Sauce
  • 1 medium Shallot Can substitute with onions
  • 1 cup Coconut Cream Cashew cream can be used as a substitute
  • 1/4 cup Fresh Dill Dried dill can be used in smaller quantity

Method
 

Preparation Steps
  1. Press the tofu to remove excess moisture for about 30 minutes.
  2. Cut the tofu into desired shapes. Marinate with vegetable broth, lemon juice, olive oil, and salt for at least 1 hour.
  3. Set up a breading station with cornstarch and vegan breadcrumbs.
  4. Coat marinated tofu first in cornstarch, then breadcrumbs. Place on a greased baking sheet.
  5. Bake at 375°F (190°C) for 20 minutes, flip, and bake for an additional 15-20 minutes until golden brown.
  6. Prepare the sauce by sautéing shallots and mixing in vegetable broth, lemon juice, coconut cream, and fresh dill. Simmer for 5-7 minutes.
  7. Serve the baked tofu drizzled with lemon dill cream sauce.
