Method
 

Step-by-Step Instructions
  1. Cook the rice according to package instructions and let cool.
  2. Prepare the fresh ingredients: chop imitation crab, dice cucumber and avocado, and chop cilantro.
  3. Mix mayo and Sriracha in a small bowl to make spicy mayo.
  4. In a saucepan, combine soy sauce, sugar, and mirin; cook until thickened.
  5. Toast panko in olive oil until golden brown.
  6. Assemble bowls with rice, then layer with crab, cucumber, avocado, and cilantro.
  7. Drizzle with eel sauce and spicy mayo, then top with toasted panko.
