  • 1/2 cup maraschino cherries drained & finely chopped
  • 3/4 cup semi-sweet chocolate chips or dark chocolate chips for bolder taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350º F (175º C) and prepare a baking sheet lined with parchment or silicone.
  2. In a large mixing bowl, beat together the softened butter and brown sugar until smooth and creamy.
  3. Add the egg and vanilla extract to the mixture, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt, then gradually incorporate into the wet mixture.
  5. Fold in the chopped cherries and chocolate chips until evenly distributed.
  6. Scoop heaping tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart and pressing extra chocolate chips and cherries on top.
  7. Bake for 13-15 minutes until set around the edges but soft in the center, then cool on the baking sheet for 15 minutes before transferring to a wire rack.
