Step-by-Step Instructions
  1. In a medium bowl, whisk together the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips until smooth and creamy.
  2. Preheat your oven to 375°F (190°C).
  3. Take one pre-made pie crust and fit it into a 9×9-inch baking dish, pressing it firmly into the corners.
  4. Spoon the ricotta filling over the crust, spreading it out while leaving a small border.
  5. Place the second pie crust on top of the filling, sealing the edges and brushing the top with egg wash. Sprinkle sugar over it.
  6. Bake for 30-35 minutes, checking for a golden-brown top and bubbling filling.
  7. Once baked, cool for at least 30 minutes before slicing into squares and serving.
