Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface to 1/8 inch thickness and transfer to the baking sheet.
  3. Cook diced pancetta in a skillet over medium heat for 3-5 minutes until crispy, then drain on paper towels.
  4. Spread cranberry sauce over the pastry, top with Brie cheese and crispy pancetta, then fold the edges to create a border.
  5. Bake in the preheated oven for 20-25 minutes until golden brown and the Brie is melted.
  6. Cool for a few minutes before slicing and garnishing with fresh thyme.
