Preparation Steps
- Slice pitted Medjool dates lengthwise without cutting all the way through to create a pocket.
- Fill each date with creamy peanut butter, pressing firmly.
- Sprinkle roasted peanuts on top of the filled dates, pressing them into the peanut butter.
- Melt the dark chocolate in a small saucepan over low heat, stirring continuously until smooth.
- Dip each stuffed date into the melted chocolate, allowing excess to drip off before placing on parchment paper.
- Refrigerate coated dates for approximately 10 minutes to allow chocolate to set.
