Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.
  2. Spread uncooked long-grain rice evenly across the bottom of the prepared casserole dish.
  3. Season chicken and place directly on top of the rice layer, ensuring even distribution.
  4. Pour chicken broth over the rice and chicken layers to provide moisture.
  5. Mix Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to create the tzatziki sauce.
  6. Spoon the tzatziki sauce mixture over the chicken and rice layers evenly.
  7. Cover the dish tightly with foil and bake for 45-50 minutes, until chicken reaches 165°F (75°C).
  8. Remove from oven, let sit for 5 minutes before serving warm.
